Here at I Said Bread we want to bake bread that is not only delicious, but that takes the environmental impact of global wheat production into consideration. Our focus will be on sourcing wheat that is grown and milled in the UK; trying to use as many diverse wheat varieties as possible. In the UK we import most of our wheat grain from countries like Russia, Kazakhstan and Canada. These are commodity monoculture crops that have been specifically bred to be higher yielding with higher gluten levels - good for making that big fluffy loaf but not so good on our gut. The loss of bio- and genetic-diversity caused by these monoculture crops are having a huge environmental impact as they are much more reliant on inputs such as synthetic nitrogen fertilizers. In the UK there are plenty of farmers growing wheat in ways that respect the natural environment and these are the flours we will be baking with to supply your bread.
